The Lighter Side
The South is as famous for it's food as it is for it's hospitality. In fact, the argument could be made that American cuisine is synonymous with Southern cooking. Much of Southern cuisine, while delicious doesn't always align with healthy eating. I'd sell a kidney to figure out how to take the calories out of grits- but I digress.
Aside from food, one of the other pillars of Southern society is SEC football. I can't tell you how many Southern brides have had to plan their autumn weddings around football season. It's that serious.
Even though it's winter, I'm always looking for healthy game-day snacks, and being married to a man from Kentucky, I have basketball season to contend with as well. These lettuce wraps pack all the flavors of game-day hot wings in a low-cal, wet-wipe-free package. Even my husband, who is vehemently against healthy options, gives these a thumbs up!
To start with we need to make Ranch Dressing we'll top our wraps with. This dressing is low-calorie and super easy to make. One bottle packs 230 calories, compared to Hidden Valley's calorie count of 140 cal for 2 tbsp. I make this in advance and like a good Southerner- use it on everything.
For Ranch you need:
- 1 c. non-fat plain Greek yogurt
- 1 c. buttermilk
- 1 tbsp dried dill
- 1 tbsp dried chives
- 1/2 tsp minced garlic (jarred)
- Kosher salt (to taste)
Combine all ingredients in jar with a lid. Shake vigorously to combine ingredients. Adjust salt to taste as needed. Refrigerate and allow flavors to marry for 4-6 hours before use.
**PRO TIP- pour some of the liquid from the jar of minced garlic into the Ranch to intensify the flavors.
For Wraps you need
- Butter lettuce
- Two chicken breasts
- 2 tbsp Butter
- Buffalo wing sauce (I use Sweet Baby Ray's Buffalo sauce)
- 2 stalks chopped celery
- Blue Cheese (crumbled)
In a greased pan, saute chicken until cooked through on medium heat. Once cooked, shred the chicken. On low heat, add butter and stir into chicken. Coat chicken with wing sauce, and mix in chopped celery. Remove from heat
To serve, spoon filling into lettuce cups. Drizzle ranch, and sprinkle blue cheese crumbles. Enjoy!
